- 400 g: short-grain rice (Arroz bomba)
- 500 g: fresh prawns (in shell)
- 300 g: clams or cockles
- 300 g: squid rings
- 1: Onion, finely chopped
- 4 cloves: Garlic, chopped
- 2: Ripe tomatoes, peeled and diced
- 1: Red pepper, diced
- 1 litre: seafood stock (or fish stock)
- 1 tsp: smoked paprika
- 1 pinch: saffron
- 4 tbsp: olive oil
- to taste: salt, pepper, parsley
Method for Arroz Caldoso
- Peel the prawns, keeping the shells for the stock. Keep the stock warm in a separate saucepan.

Ingredients for Conejo
- 1 rabbit (~1.5 kg), cut into pieces
- 200 ml: white wine
- 100 ml: extra virgin olive oil
- 5 cloves: garlic
- 1 tbsp: fresh thyme
- 1 tbsp: Fresh oregano
- 1 tsp: Paprika
- 1 tsp: Cumin
- 1 tbsp: Vinegar (wine vinegar)
- to taste: salt, pepper
- Side dish: papas arrugadas + mojo
Method
- Marinade: Crush the garlic in a mortar. Mix with the wine, oil, vinegar, all the herbs and spices.
- Place the rabbit pieces in the marinade. Leave to marinate in the fridge for 12–24 hours.
- Remove the rabbit from the marinade (keep the marinade). Brown on all sides in hot oil.
- Pour in the marinade. Bring to the boil, then reduce to a low heat. Simmer for approx. 1 hour.
- Serve with papas arrugadas and mojo rojo.
