Fresh off the rock – Lapas al mojo, the classic harbour dish

Lapas – limpets – are the Canary Islands’ favourite finger food. At the harbour of Caleta del Sebo you see them everywhere: little limpets on hot lava rock, heated directly over the fire until the butter bubbles and the mojo sauce sinks into it. Accompanied by a glass of wine or a cold beer. This is the simplest and most satisfying way to eat on La Graciosa.

Method
- Prepare the lapas: Rinse the fresh lapas under cold water and scrub them thoroughly. Remove any remaining seaweed. Place them with the shell opening facing upwards – they will be grilled in their shells.
- Prepare the filling: Mix the butter with the chopped garlic and parsley in a small bowl. Season to taste with a splash of lemon juice.
- Preheat the barbecue/frying pan: Preheat the barbecue or a cast-iron frying pan over the highest heat. On La Graciosa: place directly on glowing lava stones or on a charcoal barbecue.
- Heat the lapas: Place the lapas on the grill with the shell opening facing upwards. Wait 1–2 minutes until they start to simmer.
- Add the filling: Place a dollop of the butter mixture on each lapa. Optional: a splash of white wine. Continue heating for 1–2 minutes until the butter melts and bubbles.
- Add the mojo: Just before serving, spoon a teaspoon of mojo verde onto each lapa.
- Serving: Serve immediately on the stone or in the pan – lapas only taste good when hot.

Buying lapas: where and how?
Fresh lapas are hardly available in Germany. In fishmongers’ on the coast or in seafood shops: sometimes available frozen. As a substitute: Mussels work well using the same method of preparation. On La Graciosa: ask in the small shops at the harbour.
Why lapas only taste good when hot
Lapas have very little flavour of their own – the flavour comes from the heat, the mojo and the butter. As soon as they cool down, they become rubbery. Eat them straight away – no exceptions.
Practical tips
- On a charcoal barbecue: the original way. In a frying pan: a good alternative.
- Mojo verde: freshly made is always better than from a jar
- White wine is optional but recommended: it adds depth
- As a starter: perfect. As a main course: a large portion is needed
Not recommended – the texture suffers greatly. Buy them fresh and cook them straight away.
Lapas are limpets (single-shelled), whilst mussels are bivalves (double-shelled). They have a similarly mild flavour, but the texture differs – lapas are firmer.
