4 EL Butter (salted)
3 EL Mojo verde (recipe: article ET05) or shop-bought
2 EL Extra virgin olive oil
3 cloves Garlic, finely chopped
1 EL Fresh parsley, chopped
1/2 Lemon, juice
n.B. Coarse sea salt
1 EL White wine (optional)

Method

  1. Prepare the lapas: Rinse the fresh lapas under cold water and scrub them thoroughly. Remove any remaining seaweed. Place them with the shell opening facing upwards – they will be grilled in their shells.
  1. Prepare the filling: Mix the butter with the chopped garlic and parsley in a small bowl. Season to taste with a splash of lemon juice.
