Ingredients for 2 People

  • 2 fresh fish (Vieja, Sama or Cherne – approx. 400 g each)
  • 4 tbsp extra virgin olive oil
  • 1 tsp coarse sea salt
  • 2 cloves garlic, sliced
  • 1 lemon
  • 1 bowl mojo rojo or mojo verde (from a jar or homemade)

Method

  1. Clean the fish, rinse inside and out with cold water, pat dry.
  1. Rub inside and out with coarse sea salt.
  1. Make 3–4 diagonal cuts per side – right down to the bone.
  1. Place garlic slices and a little olive oil in the cuts.
  1. Preheat a griddle pan or non-stick frying pan to maximum heat.
  1. Fry the fish for 6–8 minutes per side. Do not turn until it releases naturally.
  1. Drizzle with lemon juice, serve with mojo. Papas arrugadas as a side dish.
