Ingredients for 2 People

- 4 tbsp extra virgin olive oil
- 1 tsp coarse sea salt
- 2 cloves garlic, sliced
- 1 lemon
- 1 bowl mojo rojo or mojo verde (from a jar or homemade)
Method
- Clean the fish, rinse inside and out with cold water, pat dry.
- Rub inside and out with coarse sea salt.
- Make 3–4 diagonal cuts per side – right down to the bone.
- Place garlic slices and a little olive oil in the cuts.
- Preheat a griddle pan or non-stick frying pan to maximum heat.
